Description

We are stoked to have Yesica Moreno’s Chiroso back on our menu for a second time this year. Yesica’s farm, El Rosal, is located at 1,950 masl in Urrao, Antioquia, an area of Colombia known for its cultivation of the Chiroso variety. Like Pink Bourbon, Chiroso is an Ethiopian landrace variety with very high cup quality potential across a diverse range of cup profiles. This particular lot comes from the mitaca, the period of smaller pickings in between main harvests. It was processed with an 84 hour dry fermentation after pulping, and presents somewhat more candied and process-driven. Expect a fruit-forward cup that leans into some of the characteristics of a naturally processed coffee with riper tropicals and syrupy sweetness.
