Faver Ninco Pink Bourbon (GREEN)

We are so excited to have Pink Bourbon from Faver Ninco and Finca Costa Rica back on the menu this fall. Faver grows several varieties on his 10 hectare farm at 2,005 masl — considerable altitude for Huila — in the town of Santa Maria in Central Huila. This lot is a combination of two successive early and main harvest passes. Expect a vibrant expression of Pink Bourbon that leans slightly into some process-driven red fruit but still retains its structure and definition, with zippy citric acidity, rounded dark fruit, complex aromatics, and a soft floral finish.
