Ernedis Rodriguez Sidra (GREEN)

Ernedis Rodriguez is an accomplished and innovative producer who grows an array of varieties on his 14 hectare farm, El Paraiso, in central Huila. We are delighted to feature separations of three of the exotic varieties grown on El Paraiso: Chiroso, Java, and Sidra. This small Sidra lot is a lovely representation of the variety. While Sidra’s exact origins remain unclear, genetic testing has revealed it to be similar to Ethiopian landrace varieties. It is cultivated primarily in Ecuador, though also increasingly in Colombia. The Sidra cup profile can be floral, juicy, delicate, cooling, and complex — all qualities captured in this lot. Expect ripe stone fruit, refreshing citrus, slightly minty botanicals, and yellow florals.
