Description

Ernedis Rodriguez is an accomplished and innovative producer who grows an array of varieties on his 14 hectare farm, El Paraiso, in central Huila. Last month, we featured separations of three of the exotic varieties grown on El Paraiso: Chiroso, Java, and Sidra. This small Sidra lot comes from a slightly later picking from that same harvest. While Sidra’s exact origins remain unclear, genetic testing has revealed it to be similar to Ethiopian landrace varieties. It is cultivated primarily in Ecuador, though also increasingly in Colombia. This particular lot preserves classic Sidra notes — floral, juicy, delicate, cooling, complex — within a more fruited, lightly process-driven cup profile of ripe stone fruit, syrupy red berries, and creamy vanilla.
