Ernedis Rodriguez Chiroso (GREEN)

Ernedis Rodriguez is an accomplished and innovative producer who grows an array of varieties on his 14 hectare farm, El Paraiso, in central Huila. We are delighted to feature separations of three of the exotic varieties grown on El Paraiso: Java, Sidra, and this small Chiroso lot. Huila may be the epicenter of speciality coffee production in Colombia, but Chiroso is still a relatively new variety for the region. Most of the Chiroso on our menu comes from Urrao, a few hundred miles to the north; in fact, the seeds for Ernedis’s Chiroso were sourced from a farm in Urrao. This particular lot has less process-driven fruit and more subdued acidity than many of Chirosos from Urrao. We find a gentler profile of tropical sweetness and light oolong tea.
