Oh boy, it’s the best time of year around here - the time when the fresh Ethiopian coffees hit our shores. For coffee folks like us, nothing really compares. And you know we love a country specific pairing. So the timing could not have been more perfect when Mr Bongo reached out to gauge our interest in this record by the Ibex Band - a pivotal force in shaping Ethiopia’s iconic sound. Hell yes!, we said. Brings to mind that old saying, “Ethiopia - best coffee, best music”.
Tima - Guji, Ethiopia
We have been buying Ture Waji's washed and natural coffees from the sub-Kebele of Bookkisa for 3 years in a row now. His coffees are so dependable and we basically cup the buying samples as a formality already knowing that we will be buying them. This is the second year he has offered a washed lot from the sub-Kebele of Tima and man it is as good as ever. At the Weessi washing station, fully ripe cherry is pulped using a Penagos eco-pulper, it is then fermented/soaked in water for 12 hours before being removed to drying tables.The cup is full of peach, sweet lemon citrus and jasmine.
