Description

Our first Ethiopian honey of the season comes to us from Ture Waji and the Suke Washing and Drying Station in the Oromia region of Guji. Coffees from Guji can be absolute stunners, with rippling acidities, bright floralities, and layered fruit profiles — and this "golden" honey preserves that distinctive terroir in a more process-forward cup. The lot is composed of coffee from approximately 23 smallholder farmers from the village of Uddo Hadammaa, where producers primarily grow the productive and disease-resistant 74110 and 74112 varieties. Cherries are picked, sorted, and de-pulped, then immediately placed on raised beds for 15-20 days with consistent agitation for clean and even drying. Expect a bold but nuanced expression of melon, stonefruit, citrus, and heady florals buoyed by a deep syrupy red fruit sweetness.
