Finca El Convenio is located at 1850 masl in El Jardin, a hamlet in the municipality of San Antonio in Tolima. El Convenio is owned by Gabriel Campos and is quite small—he has only 1.5 hectares planted right now in Caturra and Castillo. Gabriel has implemented selective picking practices on his farm, ensuring that only the ripest, reddest cherries are picked during harvest. After picking and pulping, the coffee is fermented for up to 28 hours until it feels ready and then is dried for an average of 18 days on drying beds. The result is a cup that is full of florals: honeysuckle and black tea notes dominate in a cup that is otherwise balanced and sweet.
