We're so stoked to offer fresh crop Costa Ricas this year with the help of our friends at Selva, especially this honey process lot from Javier Solis in the Tarrazu region. Javier and his father Alfonso take great care of their farm in the Dota valley by fertilizing, planting shade trees, and maintaining 5 hectares of it purely as a reserve for plant and wildlife. The Solis family has an ideal setup and location for their honey process coffees, which take roughly three full weeks to achieve their proper moisture content. This long, slow drying process is crucial for the stability and clarity of the coffee. The coffee portion of their farm, Cedral, is still young with the Catuai trees only just reaching seven years old. This coffee is amazing, and working with Selva and with Javier is just the cherry on top.
